How to Make Fluffy Buckwheat Blini Delights

1. Activate Yeast

Start by warming the milk until it feels just slightly warm to the touch. Stir in the dry yeast and let it sit for a few minutes to activate the yeast, which will kickstart the fermentation process.

2. Prepare Initial Batter

In a medium bowl, mix together ¼ cup of buckwheat flour, ¼ cup of all-purpose flour, the sugar, and salt. In a separate bowl, whisk the egg yolks and then mix them into the warm milk and yeast mixture. Gradually stir this mixture into the dry ingredients, combining everything until you get a smooth, consistent batter. Cover the bowl with a clean cloth and let it rise in a warm place for about an hour, or until the mixture has doubled in size.

3. Add Remaining Flours and Milk

While the sponge is rising, mix the remaining ¼ cup of buckwheat flour and ¼ cup of all-purpose flour together. After the first rise, add these flours to the sponge, alternating with the additional 6 tablespoons of room temperature milk. Stir until the batter is smooth and lump-free. Cover the bowl again and let it rise for another hour. For convenience, you can let it sit for up to 4-5 hours in a cooler room if needed.

4. Beat Egg Whites and Fold into Batter

While the batter is rising for the second time, beat the egg whites in a clean bowl until they form soft peaks. Once the batter has doubled again, gently fold the beaten egg whites into the batter. This step is crucial as it incorporates air, ensuring your blinis will be light and fluffy.

5. Cook Blinis

Heat a lightly buttered griddle or non-stick skillet over medium heat. Drop spoonfuls of batter onto the hot surface. Cook the blinis until the edges start to dry and you see bubbles forming on the surface, which should take less than a couple of minutes. Flip them and cook for another minute or until the other side is golden brown.

6. Serve Blinis
