    How to Make Pork Carnitas

    1. Marinate the Pork

    Combine pork shoulder, red onion, and garlic cloves with fresh orange juice, extra-virgin olive oil, and fresh lime juice in a large roasting pan. Add ancho chile powder, kosher salt, and freshly ground black pepper to the mix. Allow the pork to marinate in this mixture for about 30 minutes.

    2. Roast the Pork

    Cover the marinated pork in the roasting pan with aluminum foil and place it in a preheated oven at 350°F (177°C). Roast for 1 hour and 30 minutes.

    3. Crisp the Pork

    Remove the foil and increase the oven temperature to 425°F (218°C). Continue roasting the pork uncovered for another 30 to 40 minutes, until the edges are crisp and most of the juices have evaporated.

    4. Shred and Serve

    After roasting, let the pork rest for about 15 minutes. Then, use forks to shred the pork into bite-sized pieces, ready to serve.
