1. Cut Pork and Add to Pan
Cut the boneless pork shoulder into 1-inch cubes and place in a heavy-bottomed pan in a single layer for even cooking.
2. Simmer with Water and Seasonings
Pour just enough water to cover the pork. Add ½ teaspoon of salt and 2 teaspoons of fresh lime juice. Bring to a simmer over medium heat, cover, and let cook gently for about 45 minutes.
3. Evaporate Liquid and Brown Pork
Once the pork is tender, remove the lid, increase heat to high to evaporate the liquid. Then, lower the heat to let the pork fry in its own fat until golden brown.
