1. Sauté Onions and Garlic
Preheat your oven to 350°F (175°C). In a skillet over medium heat, add the extra-virgin olive oil, chopped onion, and minced garlic, seasoning with kosher salt and freshly ground black pepper. Cook until softened and beginning to brown, about 8 minutes.
2. Prepare Meat Loaf Mixture
In a large bowl, combine the beaten eggs, bread crumbs, milk, and Worcestershire sauce. Season with salt and pepper. Add the ground chuck and mix until just combined, being careful not to overwork the meat.
3. Bake Meat Loaf
Shape the meat mixture into a loaf and place on a foil-lined baking sheet. Drape bacon slices over the loaf, tucking the ends underneath. Bake for approximately 1 hour and 10 minutes, or until the internal temperature reaches 165°F (74°C).
