How to Make Savory Keto-Friendly Pulled Pork with Homemade Coleslaw

1. Preheat Oven

Preheat your oven to 300°F. This temperature is ideal for slow-cooking the pork to tender perfection.

2. Heat Lard and Rub Pork

In a large Dutch oven, heat the lard over medium heat. While it’s heating, rub the pork shoulder roast generously with the Basic Spice Rub.

3. Brown Pork

Once the fat is hot, place the pork roast in the Dutch oven. Brown it thoroughly on all sides; this step is crucial as it creates a flavorful crust that will enhance the overall taste of the dish.

4. Deglaze Pot

After the pork is browned, add one cup of water to the Dutch oven and bring it to a boil. This will help to deglaze the pot, lifting all those delicious browned bits from the bottom.

5. Cook Pork

Cover the Dutch oven and transfer it to the preheated oven. Let it cook for about 3 hours. This slow-cooking method will tenderize the meat beautifully, making it practically fall apart at the touch of a fork.

6. Shred Pork and Add BBQ Sauce

When the pork is done, remove it from the oven. Using two forks, shred the pork, discarding the bone. Pour in one cup of Low-Carb BBQ Sauce and toss it all together until the pork is well-coated.

7. Season and Serve

Season with salt and pepper to taste, ensuring every bite is perfectly seasoned. If you have leftovers, store them in the refrigerator for up to 3 days or freeze for up to a month. Enjoy your savory, keto-friendly pulled pork with a side of homemade coleslaw for a complete meal!
