How to Make Cardamom-Scented Sweet Malpua Pancakes

1. Prepare the batter

Mix together the all-purpose white flour, milk, and heavy cream in a bowl until you have a smooth batter. Refrigerate overnight to allow the batter to thicken and the flavors to meld.

2. Prepare the syrup

Combine the sugar, water, and cardamom pods in a pot. Bring to a boil, then reduce the heat and simmer for 2-3 minutes to dissolve the sugar completely and create a fragrant syrup.

3. Cook the pancakes

Heat 3 tablespoons of vegetable oil in a 10–12-inch skillet over medium flame. Pour small amounts of the prepared batter into the skillet. Cook slowly, turning once, until golden brown and crisp. Maintain about 3 tablespoons of oil in the skillet constantly.

4. Immerse in syrup

Once the pancakes are cooked, immediately immerse them in the warm syrup to absorb the sweetness while retaining their crisp texture. Serve at room temperature or slightly warm with the syrup.
