1. Create the syrup
In a small saucepan, combine the granulated sugar, honey, and 1 cup (240 ml) of water. Heat the mixture over medium heat until it begins to simmer. Allow it to simmer for another two minutes, stirring occasionally to ensure the sugar dissolves completely.
2. Infuse the vanilla
Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the simmering syrup. Reduce the heat and let the mixture cool to room temperature. The cooling syrup will allow the vanilla to steep thoroughly, releasing its rich flavor.
3. Combine and adjust
In a large pitcher, combine the freshly squeezed lemon juice with the infused vanilla syrup and a pinch of sea salt. Stir in the remaining 2 cups (475 ml) of water. Taste the lemonade and adjust the sweetness or water content according to your preference.
