    How to Make Salt and Pepper Limeades

    1. Prepare Lime Zest Mixture

    Using a peeler, zest two of the limes, being careful to avoid the bitter white pith. In a bowl, combine the lime zest with 3 tablespoons of granulated sugar, ⅛ teaspoon of kosher salt, and a few grinds of black pepper. Use a muddler or the back of a wooden spoon to press down and crush these ingredients together.

    2. Dissolve Sugar in Water

    Take the fragrant sugar mixture and add it to 1½ cups of cold water. Use a whisk to dissolve the sugar thoroughly. Optionally, let it sit for about 5 minutes to allow the flavors to meld.

    3. Add Lime Juice

    Juice the remaining limes until you have ½ cup of fresh lime juice. Pour this lime juice into the sugar-water mixture and give it a good stir. Strain the limeade using a fine strainer to remove any unwanted zest bits or seeds.

    4. Prepare Salt and Pepper Rim

    Mix 1 tablespoon of kosher salt with 1 teaspoon of black pepper on a small rimmed plate. Swipe the rim of each glass with a lime wedge to moisten it, then dip the rims into the salt and pepper mixture.

    5. Serve Limeades

    Fill the prepared glasses with ice and pour the strained limeade over the top.
