1. Preheat Oven and Prepare Fruit
Preheat your oven to 350°F (180°C). Toss halved and pitted plums or apricots with granulated sugar in a 13 x 9-inch roasting dish.
2. Add Lemon and Vanilla
Zest the lemon over the sugared fruit and squeeze in the juice. Add the scraped vanilla seeds and the vanilla bean to the fruit mixture.
3. Roast the Fruit
Roast the fruit in the preheated oven for 30 to 40 minutes until the juices thicken and become syrupy.
4. Cool and Jar
Let the jam cool slightly before transferring it to jars. Store in the refrigerator to enjoy over the coming weeks.
