A hydrating and nourishing beverage made with barley, lemons, and honey, perfect for a refreshing drink.
1. Boil Barley
Pour 2 quarts of water into a medium saucepan and add 1 cup of hulled barley. Cover the saucepan with a lid to increase the temperature and bring to a boil. Once boiling, reduce the heat to maintain a gentle simmer and let it cook for 30 minutes.
2. Prepare Lemons
While the barley simmers, peel two lemons with a vegetable peeler, taking care to avoid the bitter white pith. Juice the lemons and set the juice aside in a 3-quart pitcher.
3. Combine Ingredients
Once the barley has finished simmering, strain the liquid through a fine-mesh strainer to remove the grains. In the pitcher with the lemon juice, add the strained barley water, lemon peel, and ¼ cup of orange blossom honey. Stir until the honey is completely dissolved.
4. Chill and Serve
Chill the prepared barley water in the refrigerator until cool. Serve the refreshing drink to family or friends.
