How to Make Passion Fruit Granita

1. Combine Ingredients

In a bowl, whisk together the passion fruit puree, cold water, and sugar. Start with 2 tablespoons of sugar and mix until the sugar begins to dissolve. Let the mixture sit in the refrigerator for three hours, stirring occasionally to ensure the sugar fully dissolves.

2. Prepare Pan and Chill Mixture

Prepare a small baking sheet or cake pan by placing it in the freezer to chill. After three hours of chilling the mixture in the refrigerator, pour it into the chilled pan and place it back in the freezer for about 30 to 45 minutes, or until the mixture starts to freeze around the edges.

3. Stir and Scrape

Stir and scrape the mixture with a fork every 30 minutes to break up ice crystals. Continue this process until the mixture is evenly granular, ensuring a light and fluffy granita texture.

4. Freeze Until Serving

Once the granita has reached the desired texture, cover it and keep it frozen until ready to serve. This granita can be stored in the freezer for up to one week.
