    How to Make Kumquat-Clementine Cordial

    1. Make Simple Syrup

    In a glass measuring cup or bowl, combine ¼ cup of superfine sugar with 1 tablespoon of boiling water. Stir the mixture until the sugar is completely dissolved and the liquid is clear.

    2. Combine Ingredients for Infusion

    In a glass bottle or jar with a lid, combine the sugar syrup, fresh clementine juice, sliced kumquats, sliced clementine, white rum, whole allspice berries, and star anise. Seal the bottle or jar and shake well to mix.

    3. Infuse for One Week

    Place the sealed bottle or jar in a cool, dark place. Shake once a day for a full week to ensure the flavors meld together.

    4. Strain and Serve

    After a week, strain the mixture if desired, and serve the cordial as an aperitif or in cocktails.
