How to Make Honey-Glazed Lemon Apricot Peaches

1. Preheat Oven

Preheat your oven to 400°F.

2. Prepare Peaches

Carefully cut the peaches in half and remove the pits. Place the peach halves, cut side up, in a 9- by 13-inch shallow earthenware baking dish.

3. Make Glaze

In a small bowl, whisk together the apricot jam, honey, water, lemon zest, and fresh lemon juice.

4. Coat Peaches

Spoon the glaze mixture generously over each peach half, ensuring they are well-coated. Sprinkle ½ teaspoon of sugar over each peach half.

5. Bake Peaches

Place the dish in the oven and bake for 30 to 45 minutes, basting the peaches several times with the glaze from the dish, until the peaches are tender and slightly caramelized.

6. Serve

Serve the peaches warm, ideally with a scoop of ice cream, and drizzle some of the delicious juices from the baking dish over the top.
