How to Make Fresh Lime Ice with Berries

1. Zest and Juice Limes

Gather all the zest from two of the limes. Use a grater to finely grate the bright green zest into a large bowl, avoiding the bitter white pith. Juice enough limes to yield 3/4 cup of lime juice and pour this into the bowl with the zest.

2. Mix Base Ingredients

Add the sugar, corn syrup, and 1 3/4 cups of water to the lime juice and zest. Stir gently but thoroughly until the sugar is completely dissolved. This creates a smooth base for the lime ice.

3. Freeze Using Ice Cream Maker

If using an ice cream maker, pour the lime mixture into it and follow the manufacturer's instructions for freezing. Once at soft serve consistency, transfer to a container and freeze until firm, around several hours, but best enjoyed within 24 hours.

4. Freeze Without Ice Cream Maker

Without an ice cream maker, pour the mixture into a 13 × 9-inch baking dish and freeze. After 45 minutes, stir with a fork, breaking any frozen sections. Continue to check and stir every 15 minutes twice more until slushy.

5. Serve with Berries

Scoop the lime ice into small dishes and sprinkle with fresh berries of your choice. The berries complement the zesty lime for a refreshing treat.
