How to Make Citrus-Scented Winter Fruit Medley

    1. Combine Ingredients in Saucepan

In a medium-sized saucepan, combine the golden raisins, Zante currants, dried cherries, diced dried apricots, and diced dried apples. Pour in the fresh orange juice and add the strips of orange zest and the brown sugar.

    2. Add Vanilla Bean and Star Anise

Split the vanilla bean lengthwise with a sharp knife and scrape the seeds out. Add both the scraped seeds and the empty vanilla pod to the saucepan. If using, add the star anise.

    3. Cook the Mixture

Place the saucepan over medium heat and cook for about 3 to 5 minutes, until the dried fruits have plumped up and the juice has thickened to a slightly syrupy consistency.

    4. Remove and Serve

Remove the saucepan from heat and let the mixture cool slightly. Discard the vanilla bean, orange zest, and star anise. Serve the medley as a topping for yogurt, pancakes, or enjoy on its own.

    Pitfalls and tips

    Select the Best Fruit

Choose fresh, in-season varieties for the best quality and flavor. Heavy citrus and firm apples and pears are ideal.

    Balance the Flavors

Adjust sweetness or tartness with honey or citrus juice to achieve harmony in your medley.

    Add a Zest

Fresh zest intensifies aroma and adds color. Zest over the bowl right before serving.

    Segment Citrus with Care

Use 'supreming' to enhance texture and presentation by removing bitter pith.

    Consider a Dressing

A light dressing of citrus juice, sweetener, and liqueur or vinegar can tie the elements together.
