A refreshing and nutritious beverage made with barley, lemons, and honey.
1. Simmer Barley
Combine 2 quarts of water and 1 cup of hulled barley in a medium saucepan. Cover and bring the mixture to a boil over medium-high heat, then reduce the heat to low and let the barley simmer for about 30 minutes, or until the barley grains are fully expanded and softened.
2. Prepare Lemons
While the barley is simmering, zest and juice two lemons. Place the lemon juice in a 3-quart pitcher.
3. Strain and Sweeten
After the barley has finished simmering, strain the liquid through a fine-mesh strainer over the pitcher containing the lemon juice. Discard the cooked barley. Stir in ¼ cup of orange blossom honey into the strained liquid until completely dissolved.
4. Chill and Serve
Refrigerate the barley water until thoroughly chilled, then serve.
Opt for pearl barley for its mild flavor and soft texture; use hulled barley for more nutrients but longer cook time.
