How to Make Seitan Enchiladas with Cheese and Pickled Jalapeños

    1. Preheat Oven

Preheat your oven to a warm setting, around 375°F (190°C), to ensure it's ready for baking.

    2. Combine Filling

In a mixing bowl, combine the sliced or shredded seitan, enough shredded cheese to your liking, and a generous amount of sliced pickled jalapeños. This mixture will form the hearty and flavorful filling of your enchiladas.

    3. Assemble Enchiladas

Place a tortilla on a clean surface and spoon a portion of the seitan-cheese-jalapeño mixture down the center. Carefully roll the tortilla around the filling and place it seam-side down in a baking dish. Repeat this process with the remaining tortillas until all the filling is used.

    4. Add Sauce and Bake

Once all the enchiladas are snugly lined up in the dish, pour the enchilada sauce generously over them, making sure each one is well-coated. Slide the dish into the preheated oven and bake until the cheese is melted and bubbly, usually taking about 20-25 minutes.

    5. Serve and Enjoy

After baking, you can add optional garnishes for extra flavor and freshness. Top with freshly chopped cilantro, a dollop of sour cream, or some creamy avocado slices, if desired. Serve hot and enjoy!
