How to Make Seitan Enchiladas with Cheese and Pickled Jalapeños

1. Preheat Oven

Preheat your oven to a warm setting, around 375°F (190°C), to ensure it's ready for baking.

2. Combine Filling

In a mixing bowl, combine the sliced or shredded seitan, enough shredded cheese to your liking, and a generous amount of sliced pickled jalapeños. This mixture will form the hearty and flavorful filling of your enchiladas.

3. Assemble Enchiladas

Place a tortilla on a clean surface and spoon a portion of the seitan-cheese-jalapeño mixture down the center. Carefully roll the tortilla around the filling and place it seam-side down in a baking dish. Repeat this process with the remaining tortillas until all the filling is used.
