How to Make Perfectly Silky Skillet-Fried Eggs

1. Heat the Skillet

Start by heating a nonstick skillet on low heat. The trick here is to be patient; low heat ensures that your eggs cook evenly without the whites becoming rubbery.

2. Melt the Butter

Add the butter to the skillet and allow it to melt completely, but be careful not to let it brown. Browned butter can alter the flavor and we want the taste of the eggs to shine through.

3. Prepare the Eggs

While the butter is melting, crack your eggs into separate bowls. This step is crucial as it allows you to ensure that no shell fragments sneak into your skillet and makes it easier to slide the eggs in without breaking the yolks.

4. Cook the Eggs

Once the butter is melted and gently sizzling, but not browning, carefully slide the eggs from the bowls into the skillet. The eggs should slide smoothly, and the yolks should remain intact. Let the eggs cook on low heat. For runny yolks, you'll need about 2 minutes; for yolks that are soft but set, give them around 2.5 minutes; and for firmly set yolks, let them go for the full 3 minutes. During this time, season the eggs with a pinch of salt and a pinch of pepper.

5. Serve the Eggs

Once cooked to your desired doneness, carefully remove the eggs from the skillet. Serve immediately and enjoy the perfectly silky texture that low and slow cooking brings to your skillet-fried eggs.
