How to Make Microwave-Steamed Egg Delight

    1. Whisk Eggs and Liquid

In a medium-sized, microwave-safe cereal bowl, whisk together two large eggs with a cup of kombu dashi (or your choice of liquid) and a dash of salt until well combined, making sure to avoid any air bubbles.

    2. Microwave the Mixture

Cover the bowl with a microwave-safe plate and microwave at 50% power for 5 to 7 minutes, until the eggs are just set and have a soft, custard-like texture.

    3. Rest and Season

Allow the eggs to rest briefly in the microwave before uncovering. Drizzle a teaspoon of soy sauce and a teaspoon of maple syrup over the eggs, then sprinkle a tablespoon of finely chopped chives or scallion greens on top.
