How to Make Toasted Guajillo Chile Dressing

1. Heat Oil and Toast Chiles and Garlic

Heat the oil in a small skillet over medium heat until hot but not smoking. Add the prepared guajillo chiles and quartered garlic cloves to the skillet, toasting them for about 30 seconds until the chiles lighten in color and a toasty aroma is released.

2. Blend Chiles and Vinegar

Remove the toasted chiles from the skillet and place them in a blender along with the sherry vinegar and a pinch of salt. Blend the mixture for about 30 seconds until the chiles are finely chopped.

3. Combine Oil and Garlic with Blended Mixture

Let the oil and garlic cool for 5 to 10 minutes, then add them to the blender with the chile and vinegar mixture. Blend for about one minute until the dressing is smooth and well combined.

4. Adjust Seasoning and Store

Taste and adjust the seasoning with additional salt if needed. Pour the dressing into a jar with a lid and store it in the refrigerator. Shake well before each use.
