1. Char the Lemons
Place a cast-iron skillet over medium-high heat and lay the lemon halves cut-side down. Allow them to cook for 3 to 5 minutes until the flesh is softened and has developed beautiful char marks.
2. Prepare the Tahini Base
In a blender, combine a clove of garlic with ½ cup of tahini. Blend until the garlic is fully incorporated and the mixture is smooth.
3. Combine with Roasted Lemon
Once the lemon is nicely charred, squeeze its juice into the blender with the tahini mixture. Add ½ teaspoon of sea salt and ½ cup of water. Blend until everything is well combined, and the mixture is creamy. Adjust with a little more water if needed to reach the desired consistency.
4. Adjust Seasoning
Taste your roasted lemon tahini and adjust the seasoning as needed. A little more salt, a splash of lemon juice, or even a touch more water might be necessary to achieve the perfect balance.
