1. Cook the Chorizo
Place the chorizo in a small skillet over medium heat, breaking it apart as it cooks for about 8 to 10 minutes until browned and cooked through.
2. Add Garlic
Add the finely chopped garlic to the skillet, stirring for about 1 minute until fragrant.
3. Combine the Dressing Ingredients
Transfer the cooked chorizo and garlic to a jar. Add the oil, apple cider vinegar, crumbled oregano, and a pinch of salt. Secure the lid and shake well until the ingredients emulsify into a smooth dressing.
