1. Prepare and Salt Cucumbers
Finely chop or grate the European cucumber or Persian cucumbers, sprinkle a pinch of salt over them, and let them sit in a colander over a sink to draw out excess water for about 15 to 30 minutes.
2. Rinse and Drain Cucumbers
Rinse the salted cucumbers under cold water and then gently squeeze out any remaining liquid using paper towels.
3. Combine Yogurt and Seasonings
In a mixing bowl, combine the drained yogurt with mashed garlic cloves, a ¼ teaspoon of salt, freshly chopped mint, freshly ground pepper to taste, and drizzle with extra virgin olive oil.
4. Fold in Cucumbers
