1. Prep Lemon-Garlic Mixture
Combine the lemon juice and minced garlic in a small bowl. Set aside to allow the flavors to meld.
2. Rinse Feta
Break the feta cheese into roughly ½-inch pieces and transfer to a medium bowl. Cover with water and gently swish to rinse. Drain well using a fine-mesh strainer.
3. Blend Feta Base
Place the drained feta into a food processor. Add the milk and the previously prepared lemon-garlic mixture. Blend until the texture resembles that of ricotta cheese, approximately 15 seconds.
4. Emulsify with Oil
Continue to process the feta mixture, slowly drizzling in 2 tablespoons of extra-virgin olive oil until it reaches a smooth, Greek yogurt-like consistency, with some small lumps remaining. This should take about 1½ to 2 minutes, making sure to stop and scrape down the sides and bottom of the bowl once.
5. Incorporate Oregano
Add in the minced fresh oregano and pulse briefly to distribute evenly throughout the dip.

Transfer the dip to a serving bowl. If serving immediately, finish by drizzling with the remaining 2 teaspoons of olive oil. For an extra touch of freshness, you can garnish with additional minced oregano.
