1. Prepare Garlic Paste
Begin by peeling two or three small garlic cloves. Place them in a mortar with a pinch of salt, and use your pestle to pound them into a smooth, silky paste.
2. Whisk Egg Yolk
In a mixing bowl, whisk one egg yolk with half of your garlic paste and about half a teaspoon of water.
3. Emulsify with Olive Oil
Prepare a cup with a spout for the olive oil. Begin adding the olive oil to the egg mixture very slowly, almost drop by drop at first, while continuing to whisk vigorously.
4. Adjust Flavor and Consistency
Once your aïoli has reached the desired thickness, taste it. If you prefer a stronger garlic flavor, stir in the remaining garlic paste. Adjust the consistency with a little water if needed, and season with salt to taste.
