How to Make Maple and Brown Sugar Pinwheels

1. Heat Soy Milk and Margarine

Heat the soy milk and vegan margarine in a small saucepan over low heat until the margarine melts. The mixture should be tepid, not hot, to prevent killing the yeast.

2. Activate Yeast

In a measuring cup, combine the warm water and active dry yeast and set it aside until it becomes foamy, indicating the yeast is activated and ready to help the dough rise.

3. Mix Dry Ingredients

In a large mixing bowl, stir together 4 cups of flour, the granulated sugar, salt, orange zest, cardamom, and allspice.

4. Combine Wet and Dry Ingredients

Make a well in the center of the dry ingredients and pour in the soy milk mixture and the foamy yeast mixture. Stir until a firm dough forms. If needed, add up to 1/4 cup more flour to achieve the right consistency.

5. Knead Dough

Turn the dough out onto a lightly floured surface and knead it for 6 to 8 minutes until it is smooth and elastic.

6. Let Dough Rise

Place the dough in a lightly oiled bowl, cover it with plastic wrap and a clean dish towel, and let it rise in a warm place for about an hour, or until it has doubled in size.

7. Prepare Filling

For the filling, combine the melted margarine and maple syrup, then brush this mixture evenly over the rolled-out dough. Sprinkle the brown sugar and grated orange rind evenly over the surface, and add the raisins if using.

8. Roll and Cut Dough

Starting from one of the long sides, roll the dough tightly into a log. Slice the log into 1.5-inch pieces and place them cut-side up on the prepared baking sheets.

9. Final Rise

Cover the rolls with a clean dish towel and let them rise for another 30 to 40 minutes until they have puffed up.

10. Bake Rolls

Preheat your oven to 350°F. If desired, brush the tops of the rolls with a little soy milk for a golden finish. Bake the rolls for 25 to 30 minutes, or until they are golden brown.

11. Prepare Icing

While the rolls bake, prepare the icing by whisking together the confectioners’ sugar, margarine, orange rind, orange juice, and soy milk until smooth.

12. Drizzle Icing

Once the rolls have baked and cooled slightly, drizzle the orange icing over them.
