How to Make Honeyed Raspberry Oat Bars

1. Prep and Preheat

Preheat the oven to 200°C (180°C fan-assisted, Gas Mark 6). Line a 20cm x 20cm (8-inch x 8-inch) square baking tin with parchment paper.

2. Melting Mixture

In a medium saucepan over low heat, melt the butter, brown sugar, honey, and a pinch of salt. Stir the mixture continuously until it begins to bubble and the ingredients are well combined.

3. Combine and Press

Remove the saucepan from heat and fold in the porridge oats, ensuring they are thoroughly coated with the honey mixture.

4. Bake with Berries

Transfer the oat mixture to the prepared baking tin. Using the back of a spoon, press the mixture evenly into the tin. Evenly distribute the frozen raspberries over the top, pressing them gently into the oat layer.

5. Golden Finish

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the edges are slightly crispy.

6. Cool and Slice

Allow the baked flapjacks to cool in the tin before slicing them into 12 bars.
