How to Make Honeyed Raspberry Oat Bars

    1. Prep and Preheat

    Preheat the oven to 200°C (180°C fan-assisted, Gas Mark 6). Line a 20cm x 20cm (8-inch x 8-inch) square baking tin with parchment paper.

    2. Melting Mixture

In a medium saucepan over low heat, melt the butter, brown sugar, honey, and a pinch of salt. Stir the mixture continuously until it begins to bubble and the ingredients are well combined.

    3. Combine and Press

Remove the saucepan from heat and fold in the porridge oats, ensuring they are thoroughly coated with the honey mixture.

    4. Bake with Berries

Transfer the oat mixture to the prepared baking tin. Using the back of a spoon, press the mixture evenly into the tin. Evenly distribute the frozen raspberries over the top, pressing them gently into the oat layer.

    5. Golden Finish

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the edges are slightly crispy.

    6. Cool and Slice

Allow the baked flapjacks to cool in the tin before slicing them into 12 bars.

    Variations

    Chocolate Charm

Scatter a handful of dark chocolate chips or cacao nibs over the raspberry layer before adding the final layer of oat mixture. Chocolate and raspberry are a classic pairing, and the bitter notes of dark chocolate will complement the sweetness of the honey.

    Citrus Twist

Add the zest of one orange or lemon to the raspberry filling for a fresh, citrusy note. The bright flavor of the citrus will provide a delightful contrast to the sweetness of the honey and the tartness of the raspberries.

    Berry Variety

Substitute raspberries with equal parts mixed berries such as blueberries, blackberries, or chopped strawberries to vary the fruit component.

    Coconut Coast

Swap out a quarter of the oats with unsweetened shredded coconut. This will give the bars a slight coconut flavor and a chewier texture.

    Nutty Crunch

Mix in a half cup of chopped nuts such as almonds, pecans, or walnuts into the oat mixture. This will give your bars an extra layer of texture and a nutty flavor that pairs wonderfully with raspberries.
