    How to Make Crunchy Chocolate Caramel Bites

    1. Start the Caramel

    Begin by combining the water, sugar, and Diamond Crystal kosher salt in a 3-quart stainless steel saucier. Stir this mixture with a fork for about two minutes until the sugar has dissolved, allowing for even caramelization.

    2. Heat the Syrup

    Heat the mixture over medium-high heat and let it come to a hard bubble. You'll notice the syrup beginning to turn a pale gold, similar to the color of clover honey, which should take about eight minutes.

    3. Add Heavy Cream

    Once the syrup reaches this stage, carefully add the cold heavy cream while reducing the heat to medium-low. Stir constantly with a heat-resistant spatula. The mixture will foam up initially, but continue stirring until the foam subsides and the caramel appears smooth and molten, which should take around six minutes.

    4. Cook to Temperature

    Clip a digital thermometer to the side of the saucier and continue cooking, stirring occasionally, until the caramel reaches 245°F (118°C). This precise temperature ensures the caramel is perfectly set for our bites.

    5. Cool the Caramel

    After reaching the desired temperature, transfer the caramel to a heat-resistant bowl and let it cool until it registers 140°F (60°C) on the thermometer. This cooling process will take about 40 minutes and ensures the caramel is the right consistency for mixing.

    6. Stir in Chocolate and Rice Krispies

    Once the caramel has cooled, stir in the finely chopped milk chocolate. The heat from the caramel will melt the chocolate completely. Fold in the Rice Krispies until they are evenly distributed throughout the mixture.

    7. Form the Bites

    Now, divide the mixture into 15 portions and flatten each one into a disk. Place the disks on a parchment-lined half sheet pan or cutting board. Allow them to stand at room temperature for about an hour until they are fully set.

    8. Store and Enjoy

    Finally, transfer the Crunchy Chocolate Caramel Bites to an airtight container, layering parchment between them to prevent sticking. They can be stored at room temperature for up to a week or refrigerated for up to a month. Enjoy your delightful, crunchy bites!
