1. Grind Rice and Cinnamon
Take the rinsed rice and the broken pieces of cinnamon stick, and place them in a food processor or high-speed blender. Grind them until you have a coarse mixture.
2. Soak Ingredients
Transfer the ground rice and cinnamon mixture into a medium bowl or jar. Add the cashew pieces and pour in 2 cups of water. Allow this to soak for 8 to 12 hours.
3. Blend and Sweeten
Pour the soaked mixture into a blender along with the remaining 2 cups of water, sugar, and salt. Blend the mixture until it's smooth and homogeneous.
4. Strain Horchata
Use a cheesecloth or nut milk bag over a container to strain the blended mixture. Carefully pour the liquid through to remove any solid particles.
5. Serve Chilled
Pour the horchata into glasses over ice and enjoy this delightful beverage with friends and family.
