How to Make Classic Royal Icing for Decorative Cookies

1. Combine Ingredients

In a large mixing bowl, combine the sifted confectioners' sugar, egg whites, and lemon juice. Beat the mixture on low speed until it becomes smooth and shiny.

2. Increase Speed

Once the ingredients are well combined, increase the mixer speed to high and beat until the mixture becomes thick and stiff peaks form, which should take about 5 to 7 minutes.

3. Adjust Consistency

If the icing is too thick, add more egg whites; if it is too thin, add more confectioners' sugar until the desired consistency is reached. The icing should be smooth and hold its shape without being overly stiff.

4. Decorate Cookies

Transfer the icing to a piping bag fitted with a small round tip and decorate the cookies as desired. Allow the icing to dry completely, which can take up to 4 hours depending on the thickness of the application.
