How to Make Caramelized Honey with Figs and Ice Cream

1. Caramelize the Honey

In a large skillet over medium heat, cook the mild honey for about 4 to 6 minutes until it turns a dark amber color. Check the color by spooning a small amount onto a white plate.

2. Create the Glaze

Stir in the unsalted butter, white wine vinegar or fresh lemon juice, and a pinch of kosher salt into the caramelized honey. Stir until the butter melts and everything is well combined.

3. Add the Figs

Add the halved fresh figs to the skillet, ensuring they are coated with the caramelized honey mixture. Cook them for 1 to 2 minutes until they are glazed and slightly softened. Gently flip the figs to fully coat them in the glaze.

4. Serve with Ice Cream

Serve the warm, caramelized figs with a scoop of vanilla ice cream on each plate. Sprinkle a pinch of flaky sea salt over the top.
