1. Reduce Apple Cider
Pour the apple cider into a 3-to-4-quart saucepan, adding the pumpkin or apple pie spice blend if desired. Bring to a boil and simmer on medium heat for about 25-30 minutes, until the cider reduces to a syrupy consistency. Let cool to room temperature.
2. Add Bitters and Whiskey
Whisk in the bitters thoroughly into the cooled apple cider syrup. Gradually whisk in the rye or bourbon whiskey until smooth and evenly blended. Transfer to a lidded carafe and refrigerate until chilled.
3. Serve
Fill Old-Fashioned glasses with ice, pour the chilled mixture over the ice, and garnish with fresh apple slices if desired. If the cider has settled, stir gently before pouring.
