1. Prepare Base Mixture
Process 2½ cups of chocolate cookie crumbs and 1¼ cups of pecans in a food processor until finely ground.
2. Combine Wet Ingredients
In a separate bowl, combine ½ cup of bourbon, 1 cup of confectioners' sugar, 3 tablespoons of unsweetened cocoa powder, and 1½ tablespoons of honey. Mix well to create a cohesive wet mixture.
3. Mix Wet and Dry Ingredients
Pour the wet mixture into the food processor with the cookie and pecan crumbs. Pulse until just combined and evenly distributed.
4. Rest the Mixture
Let the mixture rest at room temperature for 4 hours, or for best results, overnight to allow flavors to meld.
5. Form and Coat the Balls
Form the mixture into 1-inch diameter balls and roll each ball in additional confectioners' sugar for a sweet outer coating.
6. Storage
Store the bourbon balls in an airtight container to keep them moist, or leave them uncovered to form a sugar crust. Dust with additional confectioners' sugar before serving.
