1. Preheat oven and prepare pan
Preheat your oven to 350 degrees. Grease an 8-inch springform pan with extra butter and then lightly dust it with flour.
2. Melt chocolate and butter
Place the broken chocolate and 15 tablespoons of butter in a large heatproof bowl. Set this bowl over a pot of simmering water, making sure the bottom of the bowl doesn't touch the water. Stir occasionally until the chocolate and butter are completely melted and smooth.
3. Combine wet ingredients
Remove the chocolate and butter mixture from the heat. Add the sugar, lightly beaten eggs, instant coffee granules, and kosher salt to the bowl. Whisk everything together until well combined and smooth.
4. Fold in flour
Sprinkle the flour over the chocolate mixture. Using a rubber spatula, gently fold the flour into the batter until it's fully incorporated. Be careful not to overmix.
5. Bake the cake
Pour the batter into the prepared springform pan, then place the pan on a sheet pan to catch any drips. Bake in the preheated oven for 30 to 40 minutes. The cake is done when the top puffs up and cracks slightly, and it no longer wobbles when gently jiggled.
6. Cool and serve
Remove the cake from the oven and let it cool on a baking rack. The cake will deflate a bit as it cools. Serve warm or at room temperature with sweetened whipped cream, vanilla ice cream, or crème fraîche.
