How to Make Decadent Chocolate Fudge Brownies

1. Prep Work

Grease and line a 30cm x 21cm baking tin. Preheat the oven to 180°C (160°C fan-assisted, gas mark 4).

2. Chocolate Mixture

In a microwave-safe bowl, combine the 375g of dark chocolate and 375g of butter. Melt in the microwave on medium power for about 5 minutes, stirring halfway through to ensure a smooth texture.

3. Batter Mix

In a separate bowl, whisk together the sugar and eggs until well incorporated. Gently fold in the melted chocolate mixture into the egg mixture. Sift in the flour and beat the mixture until fully combined and smooth.

4. Baking

Pour the batter into the prepared tin. Bake for 40-45 minutes, or until the surface is papery and the center feels slightly wobbly to the touch. Allow the brownies to cool completely in the tin.

5. Chocolate Topping (Optional)

For the topping, melt the additional 140g of dark chocolate and 50g of butter in the microwave on medium power for about 1 minute. Stir the mixture until it achieves a smooth consistency. Spread the melted chocolate over the cooled brownies.

6. Finishing Touches

Dust the chocolate-topped brownies with icing sugar. Cut the brownies into 24 squares and serve.

Pitfalls and tips

Quality of Chocolate

Opt for high-quality chocolate with a cacao content of at least 60-70% for a deep, rich taste.

Baking Time

Check brownies a few minutes early for moist crumbs on a toothpick for perfect doneness.

Folding Dry Ingredients

Gently fold in flour and cocoa powder until just combined to avoid overmixing and a tough texture.

Oven Thermometer

Use one to ensure the correct baking temperature and avoid over. or under-baking.

Whisking Eggs and Sugar

Beat until pale and fluffy for a crackly top, essential for texture.
