How to Make Chocolate-Tahini Tart with Crunchy Salt

    1. Prepare and Bake Crust

Preheat your oven to 350°F. In a medium bowl, mix together the flour, cocoa powder, confectioners' sugar, and ½ teaspoon of kosher salt. Pour in the melted butter and stir until the mixture has a texture similar to Play-Doh. Press this mixture firmly into a 9-inch tart pan or a springform pan. Bake for 15 to 20 minutes until the crust is firm and opaque. Allow the crust to cool on a rack.

    2. Make Chocolate Filling

Combine the chopped chocolate, tahini, and a pinch of kosher salt in a medium bowl. In a small saucepan, heat the heavy cream and honey until it begins to simmer. Pour the hot cream over the chocolate and tahini, stirring until the mixture is completely melted and glossy.

    3. Assemble and Finish Tart

Pour the chocolate filling into the cooled crust, smoothing the top with a spatula. Sprinkle a generous pinch of flaky sea salt over the top. Allow the tart to set for at least 1 hour before serving.
