How to Make Chocolate-Peanut Butter Swirl Cookies

1. Preheat Oven and Prepare Baking Sheets

Begin by preheating your oven to 350 degrees and lining two large rimmed baking sheets with parchment paper to ensure your cookies can be removed easily after baking.

2. Blend Peanut Butter and Sugar

In the bowl of your stand mixer or with a handheld mixer, blend the smooth peanut butter with 2 cups of granulated sugar just until they are fully integrated. This combination forms a sweet, creamy base that's essential for the texture of your cookies.

3. Add Eggs and Salt

Once that's done, add the three large eggs and the kosher salt to your peanut butter mixture. Continue to beat this until everything is nicely incorporated. The eggs will act as a binder for your cookies, giving them structure and richness.

4. Prepare Chocolate Dough

Now, take half of your peanut butter dough out of the mixer bowl. To the remaining half, add the chopped bittersweet chocolate and the cocoa powder. Mix these in to create a luscious chocolate dough that will swirl beautifully with the peanut butter base.

5. Shape and Bake Cookies

6. Cool the Cookies
