1. Prepare the Pan and Preheat Oven
Preheat your oven to 350ºF. Prepare an 8-inch springform pan by greasing it with butter, then lining the bottom with a circle of parchment paper.
2. Mix Dry Ingredients
In a large bowl, whisk together the sugar, cocoa powder, and sea salt until well combined.
3. Combine Wet Ingredients
Pour the melted and cooled butter into the dry ingredients and whisk until smooth. Incorporate the eggs one at a time, whisking well after each addition. Stir in the bourbon or vanilla extract.
4. Add Flour and Bake
Add the flour to the wet mixture and whisk until the batter is smooth. Pour the batter into the prepared pan and bake for 30 to 40 minutes until the top is firm and the center jiggles slightly.
5. Cool and Unmold
Let the torte cool on a wire rack for at least 2 hours. Carefully unmold the torte onto a serving platter.
6. Serve
Dust the top with cocoa powder and a pinch of cinnamon or cardamom if desired. Serve slices with whipped cream or whipped crème fraîche.
