How to Make Bittersweet Chocolate Mousse With Fleur de Sel

1. Prepare Ice Bath

Begin by preparing an ice bath to ensure it's ready when you need it. Grab a large bowl and fill it with ice water, then nest a smaller bowl on top of the ice, making sure it doesn't touch the water.

2. Melt Chocolate

Combine the bittersweet chocolate and a cup of water in a small pot. Place the pot over medium heat and let the chocolate melt, stirring occasionally. This process should take about 3 to 5 minutes, until the chocolate and water transform into a smooth and fully integrated mixture.

3. Chill and Whisk

Once the chocolate has melted, pour it into the bowl sitting in your prepared ice bath. Whisk the chocolate vigorously. As the cold from the ice bath starts to set the chocolate, it will thicken and become fluffy. Whisk until it starts to form soft mounds that hold their shape.

4. Serve with Fleur de Sel

Spoon the thickened mousse into serving bowls and sprinkle a pinch of Fleur de Sel over each serving. The salt will enhance the deep flavors of the chocolate and add a delightful contrast to the rich, creamy texture.
