    How to Make Festive Eight-Treasure Sticky Rice

    1. Soak the Rice

    First, soak the glutinous rice in plenty of water for at least 6 hours or ideally overnight. This is essential to ensure the rice absorbs enough moisture and cooks evenly.

    2. Steam the Rice

    Once the rice has soaked, drain it well. Place the soaked rice in a shallow heatproof bowl and add 1 cup of water. Set up your wok or pot with a steaming rack and bring the water to a boil. Steam the rice for about 30 minutes until it is tender and sticky.

    3. Mix Rice with Sugar and Coconut Oil

    While the rice is still hot, transfer it to a large mixing bowl. Immediately stir in the sugar and coconut oil. The heat from the rice will help dissolve the sugar and distribute the oil evenly, making the rice glossy and uniformly sweet.

    4. Prepare Fruits, Nuts, and Seeds

    Prepare your fruits, nuts, and seeds by either simmering or roasting them for 10 to 15 minutes. This will enhance their flavors and textures.

    5. Assemble Bowls

    Grease your serving bowls with a little coconut oil to prevent sticking, and arrange your chosen fruits, nuts, and seeds in the bottom of each bowl in an attractive pattern.

    6. Layer the Rice and Bean Paste

    With oiled hands, take some of the sweet rice and create a layer over the decorative fruits and nuts. Add a generous layer of red bean paste on top of the rice. Then, cover the bean paste with another layer of rice, pressing firmly to ensure there are no air pockets and the structure is compact. The rice should reach the rim of the bowl.

    7. Steam and Serve

    Finally, steam the assembled bowls for a few more minutes to reheat and soften the rice. Carefully invert each bowl onto a plate to serve, revealing the beautiful fruit and nut design on top. Enjoy this festive and delicious treat with family and friends!
