How to Make Zesty Ginger-Lime Chicken

1. Prepare Chicken

Pat the chicken dry with paper towels to ensure that the seasoning sticks well. Generously season the chicken all over with 1.5 teaspoons of kosher salt and a few good cracks of black pepper.

2. Prepare Marinade

In a medium bowl, stir together the mayonnaise, lime zest, finely grated ginger, a pinch of salt, and some black pepper until well combined.

3. Marinate Chicken

Add the seasoned chicken to the bowl with the mayonnaise mixture, tossing to coat each piece evenly. Let the chicken marinate in the fridge for up to 8 hours if you have the time, but bring it to room temperature before cooking for best results.

4. Cook Chicken

Preheat a grill to medium-high heat or heat a large skillet over medium-high heat. Place the chicken on the grill or skillet and cook for about 5 minutes per side for thighs, or about 4 minutes per side for breasts, until the chicken is cooked through.

5. Serve

Serve the Zesty Ginger-Lime Chicken with lime wedges on the side. Squeeze fresh lime juice over the top before eating for an extra burst of freshness.

Pitfalls and tips

Marinate for Maximum Flavor

Marinate your chicken for several hours, or overnight, to infuse it with the vibrant flavors of ginger and lime and tenderize it.

Use Fresh Ingredients for the Marinade

Fresh ginger and lime will impart more vibrant flavors than dried or bottled counterparts.

Balance Your Marinade

Include elements of acidity, spice, sweetness, and fat for a well-rounded marinade that also promotes caramelization during cooking.

Rest the Chicken

Let the chicken rest before slicing to allow juices to redistribute for a moist and flavorful result.

Choose the Right Chicken Cut

Opt for chicken thighs for more flavor and juiciness, and ensure they're cooked to the correct internal temperature of 165°F (74°C).
