1. Warm the Chicken Broth
Start by pouring 6 cups of chicken broth into a large pot and set it over medium heat.
2. Prepare and Add Lemongrass
While the broth is warming up, take the lemongrass stalks and trim off the root ends. Smash the lemongrass stalks with a cleaver or a heavy knife to release their essential oils, then make a few lengthwise cuts along each stalk. Add the prepared lemongrass to the broth.
3. Simmer the Broth
Bring the broth to a boil, then reduce the heat to a gentle simmer. Allow it to simmer for about 20 minutes.
4. Add Seasoning
After 20 minutes, add 1 teaspoon of freshly ground black pepper to the broth. Taste the broth and adjust the seasoning with salt and/or fish sauce as needed.
5. Add Lime or Coriander Leaves
Finally, scatter the fine slivers of lime leaves or the chopped coriander leaves over the broth.
