1. Cook Chicken with Water and Salt
Start by placing the chicken drumsticks and thighs in a wok or a deep cast-iron or heavy frying pan. Set the heat to high. Once the chicken is in the pan, sprinkle it with a teaspoon of salt. Pour about ½ cup of water down the side of the pan, making sure not to pour directly onto the chicken. Cover the pan tightly. This step is crucial because the steam will cook the chicken through without burning the skin. You'll know it's working when you hear a vigorous boiling sound.
2. Maintain Boil and Remove Moisture
After the water starts bubbling, lower the heat slightly to maintain a steady boil. Let it cook until the pan is nearly dry, which should take about 5 minutes. At this point, pour off any remaining liquid and reserve it for another use if you like. Wipe out the pan to remove any remaining moisture.
3. Chop Chicken and Return to Pan
Next, chop each drumstick and thigh into 2 or 3 pieces using a cleaver or chicken shears. Return the chicken pieces to the pan and place it over medium-high heat. Pour about ⅓ cup of peanut oil down the side of the pan. This method helps the oil to heat up gradually and distribute evenly.
4. Fry Chicken
Fry the chicken, turning the pieces frequently, until the skin is crisp and golden and the meat is cooked through. This should take about 7 to 10 minutes. Keep an eye on the chicken and turn the pieces to ensure even cooking and to avoid burning.
5. Serve Chicken
