1. Seasoning
Generously season the chicken legs with kosher salt and black pepper. Set aside.
2. Grill Fire
For charcoal grills, build a fire and leave one side coal-free. When the coals are covered in gray ash and medium heat is achieved (hand-test 5 inches above coals for 5-7 seconds), the grill is ready. For gas grills, set one burner to low or off, cover, and preheat for 15 minutes.
3. Sauce Prep
Mix the barbecue sauce with 1 cup water until well combined. Reserve for basting.
4. Searing
Place chicken over the coals and grill for about 15 minutes, turning every 5 minutes and basting with the sauce mixture. Continue until the skin begins to crisp and darken.
5. Indirect Cooking
Move the chicken to the cooler side of the grill. Cook for 15-20 minutes more, or until the meat is no longer pink at the center.
6. Crisp Finish
Return the chicken to the hot side, baste with sauce again, and turn a few times.
7. Serve Warm
Transfer the chicken to a warmed platter to serve.
