1. Preheat Oven and Prepare Broccolini
Preheat your oven to 400 degrees. Prepare the broccolini by removing the tough bottom halves of the stems and discarding them. Slice the remaining stems lengthwise into halves or quarters, and separate the florets.
2. Season and Roast Broccolini
Transfer the broccolini to a sheet pan. Drizzle with olive oil, then sprinkle with kosher salt and freshly ground black pepper. Toss well to coat. Roast in the oven for about 10 minutes, tossing halfway through.
3. Add Cheddar and Finish Roasting
Slice the sharp aged white Cheddar into ¼-inch thick pieces, then break these slices into crumbles. Once the broccolini is roasted, scatter the Cheddar crumbles over the top and return the pan to the oven for 3 to 4 minutes until the cheese is melted.
4. Finish with Lemon Juice and Serve
Finish the dish with a squeeze of fresh lemon juice from half a lemon over the roasted broccolini and Cheddar. Serve immediately.
