How to Make Roasted Cauliflower with Olive Oil

1. Prep

Preheat your oven to 400°F (200°C). Line a baking sheet with foil for easy clean-up. Cut the cauliflower into even-sized florets, removing any leaves or thick stems.

2. Dress

In a large bowl, toss the cauliflower florets with olive oil until they’re well coated. Sprinkle with freshly ground black pepper to taste. Remember, we're omitting salt from the list, as the natural flavors of the cauliflower will be enhanced through roasting, and we want to avoid over-salting.

3. Roast

Spread the cauliflower florets in a single layer on the preheated baking sheet. Ensure they have space between them for proper heat circulation, which aids in caramelization. Place in the oven and roast for 25-30 minutes. Halfway through, flip the florets for even browning. You'll know they're done when they're tender inside and caramelized to a deep golden brown on the edges.

4. Finishing

Remove the cauliflower from the oven. If desired, toss with fresh herbs like thyme or rosemary for an aromatic finish. Serve immediately as a delicious and healthy side dish.
