    How to Make Creamy Cauliflower and Cheese Puree with Crispy Bacon Bits

    1. Boil Cauliflower

    Begin by bringing a large pot of water to a rolling boil. While waiting for the water to boil, cut the cauliflower into cubes. Once the water is boiling, add the cauliflower to the pot, reduce the heat, and let it simmer for 8-10 minutes until the cauliflower is fork-tender.

    2. Drain Cauliflower

    After the cauliflower is cooked, drain it well in a colander and then gently blot it with paper towels to remove any excess water.

    3. Blend Cauliflower

    Transfer the cauliflower to a food processor or blender. Add the minced garlic, butter, sour cream, pink salt, and freshly ground black pepper. Blend the mixture for about a minute until it reaches a smooth and creamy consistency.

    4. Serve and Top with Cheese and Bacon

    Divide the creamy cauliflower mixture into serving dishes. Immediately top each serving with the shredded Colby Jack cheese and crumbled bacon. The heat from the cauliflower will melt the cheese, creating a deliciously cohesive dish.
