How to Make Caramelized Cauliflower Steaks with Crispy Bacon and Blue Cheese Drizzle

1. Preheat Oven

Preheat your oven to 425°F and prepare a baking sheet by lining it with aluminum foil or a silicone baking mat.

2. Prepare Cauliflower

Remove the leaves from the cauliflower and cut it into 1-inch-thick slices. Keep the broken florets aside to roast.

3. Season Cauliflower

Place the cauliflower steaks and extra florets on the prepared baking sheet. Brush them lightly with olive oil and season generously with pink salt and freshly ground black pepper.

4. Add Bacon

Add the bacon slices to the same sheet, arranging them around the cauliflower.

5. Roast

Roast everything in the preheated oven for about 20 minutes, or until the cauliflower is tender and golden brown and the bacon is crispy.

6. Serve

Transfer the roasted cauliflower steaks to plates. Drizzle each steak with the blue cheese dressing and crumble the crispy bacon on top. Serve immediately.

Variations

Change the Cheese

Instead of blue cheese, try a creamy goat cheese drizzle or a sharp aged cheddar sauce

Swap the Bacon

While bacon offers a smoky, salty crunch, you can switch it up with prosciutto or pancetta for a different type of pork flavor, or even try turkey bacon for a lighter version

Herb Infusions

Introduce different herbs to the roasting process or the drizzle. Rosemary or thyme can add a woodsy note, while dill or tarragon can bring a bright, anise-like flavor

Spice it Up

Infuse your caramelization process with a sprinkle of smoked paprika, cumin, or a pinch of curry powder for an earthy, warm twist. A dash of cayenne pepper or red pepper flakes can add some heat if you like a little spice

Nutty Garnish

Sprinkle toasted, chopped nuts like walnuts, pecans, or hazelnuts over the finished dish for an added texture and a nutty flavor that contrasts nicely with the creaminess of the cheese and the sweetness of the cauliflower
