1. Preheat Oven and Prepare Squash
First, preheat your oven to 375°F (190°C). While the oven is warming up, take your acorn squash and quarter it, removing the seeds and strings. Don't discard the seeds; you can always roast them later for a tasty snack.
2. Bake Squash
Place the squash quarters cut-side up on a rimmed baking sheet. Pour enough water into the baking sheet to fill it about a quarter-inch deep. Cover the baking sheet with aluminum foil; this helps the squash steam and cook evenly. Pop it in the oven and bake for 35 minutes, or until the squash is tender when pierced with a fork.
3. Broil with Jerk Marinade
When the squash is tender, take it out of the oven and remove the foil. Generously slather each piece with your jerk marinade. Set your oven to broil on high and return the baking sheet to the oven for another 3 minutes, just until the sauce is bubbling.
4. Serve
Serve the roasted acorn squash hot and enjoy the burst of Jamaican flavors.
