1. Preheat Oven
Preheat your oven to 400°F.
2. Cut Cabbage
Cut the cabbage into four even wedges, ensuring each wedge retains a portion of the core to hold them together during cooking.
3. Brush Cabbage with Bacon Drippings
Brush both sides of the cabbage wedges with the reserved bacon drippings. Season the wedges generously with salt and pepper.
4. Roast Cabbage - First Side
Place the seasoned cabbage wedges on a baking sheet and roast them in the preheated oven for about 20 minutes.
5. Flip and Roast Cabbage - Second Side
After 20 minutes, carefully flip the wedges to ensure even cooking and return them to the oven for an additional 10 to 15 minutes.
6. Add Bacon and Bleu Cheese
Once the cabbage wedges are perfectly roasted, remove them from the oven and immediately sprinkle the crumbled bacon and bleu cheese over the top.
